Description
Omani Shuwa is a traditional dish of slow-cooked lamb, seasoned with spices and wrapped in banana leaves.
Ingredients

- 1 whole lamb (about 10 kg)
- 4 tablespoons coriander powder
- 4 tablespoons cumin powder
- 4 tablespoons turmeric powder
- 4 tablespoons garlic paste
- 4 tablespoons ginger paste
- Salt to taste
- Black pepper to taste
- 50 ml olive oil
- Banana leaves for wrapping
Instructions
- Prepare the lamb by cleaning and trimming excess fat.
- Mix all spices, garlic paste, ginger paste, salt, and pepper with olive oil.
- Rub the spice mixture all over the lamb, ensuring it is well coated.
- Wrap the lamb in banana leaves securely.
- Place the wrapped lamb in a deep pit or slow cooker.
- Cook for 12 to 24 hours at a low temperature.
- Unwrap and serve the lamb with rice or flatbread.
