Ingredients

  • 1 cup chickpeas (cooked)
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon turmeric
  • 6 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add diced tomatoes, parsley, and cilantro. Cook for 5 minutes.
  4. Add lentils, chickpeas, and spices. Stir well.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 30 minutes.
  7. Season with salt and pepper.
  8. Serve hot.
