Description
Moroccan Harira Soup is a traditional lentil and chickpea soup, rich in flavor and nutrients.
Ingredients

- 1 cup lentils
- 1 cup chickpeas (cooked)
- 1 onion, chopped
- 2 tomatoes, diced
- 1/4 cup parsley, chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon turmeric
- 6 cups vegetable broth
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until translucent.
- Add diced tomatoes, parsley, and cilantro. Cook for 5 minutes.
- Add lentils, chickpeas, and spices. Stir well.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Season with salt and pepper.
- Serve hot.
Notes
- Adjust spices according to your taste.
- Can be served with lemon wedges.
- Leftovers can be stored in the fridge for up to 3 days.
