Ingredients

- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 tsp vanilla extract
- 1 large egg
- 12 mini graham cracker crusts
- Fresh fruit or chocolate for topping (optional)
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, beat the cream cheese until smooth.
- Add the sugar and vanilla, and mix until combined.
- Beat in the egg until fully incorporated.
- Place the mini crusts in a muffin tin.
- Pour the cheesecake mixture into each crust.
- Bake for 15-20 minutes or until set.
- Cool completely before adding toppings.
Notes
- Chill in the refrigerator for 2 hours before serving.
- Can be topped with fruit or chocolate sauce.
- Store leftovers in an airtight container in the fridge.
