A hearty mince curry with tender potatoes, packed with flavor.
Ingredients

- 500g minced meat
- 2 large potatoes, diced
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt to taste
- 2 tablespoons oil
- Fresh coriander for garnish
Instructions
- Heat oil in a pan over medium heat.
- Add onion, garlic, and ginger. Sauté until onion is translucent.
- Add minced meat and cook until browned.
- Stir in tomatoes, curry powder, cumin, coriander, and salt.
- Add diced potatoes and mix well.
- Pour in enough water to cover the potatoes.
- Bring to a boil, then reduce heat and cover the pan.
- Simmer for 20-25 minutes until potatoes are tender.
- Garnish with fresh coriander before serving.
Notes
- Adjust spices according to your taste.
- Serve with rice or bread.
- Leftovers can be stored in the fridge for up to 3 days.
