Ingredients

  • 4 cups water
  • 1 cup mixed dried fruits (apricots, raisins, dates)
  • 1 cup mixed nuts (almonds, pistachios, walnuts)
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • Salt to taste

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a pot, heat olive oil and sauté the chopped onion until golden.
  3. Add the rice and stir for 2 minutes.
  4. Pour in water and add salt and cinnamon.
  5. Bring to a boil, then reduce heat and cover.
  6. Cook for 15-20 minutes or until rice is tender.
  7. While the rice cooks, chop the dried fruits and nuts.
  8. Once the rice is done, fluff it with a fork and mix in the dried fruits and nuts.
  9. Serve warm.
