- 4 cups corn kernels (fresh or frozen)
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup cotija cheese, crumbled
- 1 lime, juiced
- 1 teaspoon chili powder
- 1/4 cup cilantro, chopped
- Salt to taste
Instructions
- In a large skillet, heat corn over medium heat until slightly charred.
- In a bowl, mix mayonnaise, sour cream, lime juice, and chili powder.
- Add the charred corn to the bowl and mix well.
- Fold in cotija cheese and cilantro.
- Season with salt to taste.
- Serve immediately or chill before serving.
