Ingredients

- 200g Halloumi cheese
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup olives, pitted and sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Heat a non-stick skillet over medium heat.
- Slice the Halloumi cheese into thick pieces.
- Add the Halloumi to the skillet and cook until golden brown on both sides.
- In a large bowl, combine salad greens, cherry tomatoes, cucumber, bell pepper, and olives.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Top the salad with the grilled Halloumi.
- Serve immediately.
