Ingredients

- 2 cups basmati rice
- 1 pound chicken breast, diced
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 2 cups chicken broth
- Fresh parsley for garnish
Instructions
- Rinse the basmati rice under cold water.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent.
- Add minced garlic and bell pepper, cook for 2 minutes.
- Stir in diced chicken, cumin, paprika, salt, and pepper. Cook until chicken is browned.
- Add rice to the pot, stir well to combine.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
- Let it sit for 5 minutes, then fluff with a fork.
- Garnish with fresh parsley before serving.

- Use halal chicken for the recipe.
