Ingredients

  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 cups chicken broth
  • Fresh parsley for garnish

Instructions

  1. Rinse the basmati rice under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add chopped onion and sauté until translucent.
  4. Add minced garlic and bell pepper, cook for 2 minutes.
  5. Stir in diced chicken, cumin, paprika, salt, and pepper. Cook until chicken is browned.
  6. Add rice to the pot, stir well to combine.
  7. Pour in chicken broth and bring to a boil.
  8. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
  9. Let it sit for 5 minutes, then fluff with a fork.
  10. Garnish with fresh parsley before serving.
