Description

Medfouna is a traditional Berber stuffed bread filled with a savory mixture of meat, spices, and vegetables.


Ingredients

Scale
  • 500g of flour
  • 300ml of water
  • 10g of salt
  • 30ml of olive oil
  • 400g of ground meat
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp of cumin
  • 1 tsp of paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Mix flour, salt, and olive oil in a bowl.
  2. Gradually add water and knead until smooth.
  3. Let the dough rise for 1 hour in a warm place.
  4. In a skillet, sauté onions and garlic until translucent.
  5. Add ground meat, cumin, paprika, salt, and pepper; cook until browned.
  6. Stir in parsley and set aside to cool.
  7. Divide the dough into two pieces.
  8. Roll out the first piece and place the meat mixture on top.
  9. Cover with the second piece of dough and seal the edges.
  10. Preheat the oven to 200°C (400°F).
  11. Bake for 30-35 minutes until golden brown.
