Ingredients

- 2 cups all-purpose flour
- 1/2 cup matcha powder
- 4 large eggs
- 4 cups milk
- 1/2 cup sugar
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/4 cup powdered sugar
- Fresh fruit for decoration
Instructions
- In a bowl, mix flour and matcha powder.
- In another bowl, whisk eggs, milk, sugar, melted butter, and vanilla.
- Combine the wet and dry ingredients until smooth.
- Heat a non-stick pan over medium heat.
- Pour a thin layer of batter into the pan, swirling to cover the surface.
- Cook for 1-2 minutes until edges lift and are slightly browned.
- Flip and cook the other side for 1 minute.
- Repeat until all batter is used, cooling the crepes on a wire rack.
- Whip heavy cream with powdered sugar until stiff peaks form.
- Layer crepes with whipped cream in between each layer, forming a cake.
- Top with fresh fruit before serving.
Notes
- Store in the fridge for up to 3 days.
- Use a non-stick pan for best results.
