Ingredients

  • 1/2 cup matcha powder
  • 4 large eggs
  • 4 cups milk
  • 1/2 cup sugar
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Fresh fruit for decoration

Instructions

  1. In a bowl, mix flour and matcha powder.
  2. In another bowl, whisk eggs, milk, sugar, melted butter, and vanilla.
  3. Combine the wet and dry ingredients until smooth.
  4. Heat a non-stick pan over medium heat.
  5. Pour a thin layer of batter into the pan, swirling to cover the surface.
  6. Cook for 1-2 minutes until edges lift and are slightly browned.
  7. Flip and cook the other side for 1 minute.
  8. Repeat until all batter is used, cooling the crepes on a wire rack.
  9. Whip heavy cream with powdered sugar until stiff peaks form.
  10. Layer crepes with whipped cream in between each layer, forming a cake.
  11. Top with fresh fruit before serving.
