Description
Maqluba is a traditional Middle Eastern dish made with rice, eggplant, and lamb, served upside down.
Ingredients
Scale
- 2 cups basmati rice
- 1 lb lamb, cut into pieces
- 2 large eggplants, sliced
- 1 onion, chopped
- 4 cups water or broth
- 2 tsp cumin
- 1 tsp coriander
- Salt to taste
- Pepper to taste
- Oil for frying
Instructions
- Soak the rice in water for 30 minutes.
- Fry the eggplant slices in oil until golden and set aside.
- In a pot, sauté the onion until translucent.
- Add the lamb and brown on all sides.
- Stir in cumin, coriander, salt, and pepper.
- Add water or broth and bring to a boil.
- Add the soaked rice and bring to a simmer.
- Layer the fried eggplant on top of the rice.
- Cover and cook on low heat for 30-40 minutes.
- Once cooked, let it rest for 10 minutes, then invert onto a serving platter.
Notes
- Serve with yogurt or salad.
- Adjust spices according to preference.
