Description
Mansaf is a traditional Jordanian dish made with lamb and yogurt served over rice.
Ingredients

- 2 pounds lamb, cut into pieces
- 1 large onion, chopped
- 4 cups water
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- 2 cups plain yogurt
- 1/4 cup pine nuts, toasted
- 4 cups rice, cooked
- Fresh parsley, for garnish
Instructions
- In a pot, combine lamb, onion, water, salt, and pepper.
- Bring to a boil, then simmer for 1.5 hours until lamb is tender.
- Stir in cumin and yogurt, mixing well.
- Cook for an additional 10 minutes over low heat.
- In a serving dish, layer cooked rice and top with lamb and yogurt mixture.
- Garnish with toasted pine nuts and parsley.
Notes
- Adjust seasoning to taste.
- Use lamb shanks for more flavor.
- Serve with flatbread for a complete meal.
