Description

Mansaf is a traditional Jordanian dish made with lamb and yogurt served over rice.


Ingredients

  • 1 large onion, chopped
  • 4 cups water
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 2 cups plain yogurt
  • 1/4 cup pine nuts, toasted
  • 4 cups rice, cooked
  • Fresh parsley, for garnish

Instructions

  1. In a pot, combine lamb, onion, water, salt, and pepper.
  2. Bring to a boil, then simmer for 1.5 hours until lamb is tender.
  3. Stir in cumin and yogurt, mixing well.
  4. Cook for an additional 10 minutes over low heat.
  5. In a serving dish, layer cooked rice and top with lamb and yogurt mixture.
  6. Garnish with toasted pine nuts and parsley.

Notes

  • Adjust seasoning to taste.
  • Use lamb shanks for more flavor.
  • Serve with flatbread for a complete meal.
