- 2 lbs Yukon Gold potatoes
- 1/2 cup olive oil
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 4 cloves minced garlic
- 1 tablespoon dried oregano
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
Instructions
- Peel your potatoes and cut them into thick wedges.
- Preheat your oven to 400 degrees Fahrenheit.
- Mix olive oil, broth, lemon juice, garlic, oregano, salt, and pepper in a small bowl.
- Place the potato wedges in a large baking dish.
- Pour the liquid mixture over your potatoes.
- Bake the potatoes for 45 minutes.
- Flip the potatoes over.
- Bake for another 30 minutes until the liquid disappears and the edges turn golden.

- Use Yukon Gold potatoes for a creamy texture.
- Avoid crowding the pan to keep the edges crispy.
