Description
A hearty lentil soup with a smoky paprika flavor.
Ingredients

- 1 cup lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon smoky paprika
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add garlic and cook for 1 minute.
- Add lentils, vegetable broth, smoky paprika, and cumin.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper.
- Serve hot.
Notes
- For a thicker soup, blend part of it.
- Store leftovers in the fridge for up to three days.
- Garnish with fresh herbs if desired.
