Ingredients

  • 1 cup lentils
  • 2 cups spinach
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 2 cups vegetable broth
  • 1 cup rice
  • 2 cups water
  • Salt to taste

Instructions

  1. Rinse lentils under cold water.
  2. In a pot, heat some oil and sauté onions until translucent.
  3. Add garlic, ginger, and tomatoes. Cook until soft.
  4. Add lentils, spinach, turmeric, cumin, and vegetable broth. Simmer until lentils are tender.
  5. In a separate pot, combine rice and water. Add turmeric and salt. Cook until rice is fluffy.
  6. Serve lentil and spinach dal over turmeric rice.
