A nutritious and flavorful dish combining lentils and spinach served with turmeric rice.
Ingredients

- 1 cup lentils
- 2 cups spinach
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 2 cups vegetable broth
- 1 cup rice
- 2 cups water
- Salt to taste
Instructions
- Rinse lentils under cold water.
- In a pot, heat some oil and sauté onions until translucent.
- Add garlic, ginger, and tomatoes. Cook until soft.
- Add lentils, spinach, turmeric, cumin, and vegetable broth. Simmer until lentils are tender.
- In a separate pot, combine rice and water. Add turmeric and salt. Cook until rice is fluffy.
- Serve lentil and spinach dal over turmeric rice.
Notes
- Adjust spices according to your taste.
- Can add lemon juice for extra flavor.
