Description
This one-pot dinner includes chicken and gnocchi in a lemon sauce. You cook the entire meal in one skillet.
Ingredients

- 1 pound chicken breast cut into cubes
- 16 ounces potato gnocchi
- 2 cups chicken broth
- 1/2 cup heavy cream
- 2 tablespoons lemon juice
- 3 cloves garlic minced
- 2 cups fresh spinach
- 1/4 cup parmesan cheese
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat oil in a large skillet.
- Add chicken and cook until brown.
- Add garlic and stir for one minute.
- Add broth and gnocchi.
- Cover the skillet and simmer for five minutes.
- Stir in cream and lemon juice.
- Add spinach and stir until wilted.
- Mix in parmesan and pepper.
- Serve while hot.
Notes
- Fresh lemon juice tastes best.
- Do not overcook the gnocchi.
- Store leftovers in a sealed container.
