A simple and delicious lemon blueberry galette.
Ingredients

- 2 cups fresh blueberries
- 1 tablespoon lemon juice
- 1 tablespoon sugar
- 1 teaspoon cornstarch
- 1 tablespoon lemon zest
- 1 pre-made pie crust
- 1 egg (for egg wash)
- 1 tablespoon butter (for dotting)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix blueberries, lemon juice, sugar, cornstarch, and lemon zest.
- Roll out the pie crust on a baking sheet.
- Pour the blueberry mixture onto the center of the crust.
- Fold the edges of the crust over the filling.
- Brush the crust with beaten egg.
- Dot the filling with butter.
- Bake for 30-35 minutes until golden.
