Description
A refreshing Lebanese salad made with parsley, tomatoes, and bulgur.
Ingredients

- 1 cup fine bulgur wheat
- 2 cups chopped parsley
- 1 cup diced tomatoes
- 1/4 cup finely chopped mint
- 1/4 cup olive oil
- 1/4 cup lemon juice
- Salt to taste
Instructions
- Rinse bulgur wheat under cold water.
- Soak bulgur in water for 30 minutes, then drain.
- In a large bowl, combine bulgur, parsley, tomatoes, and mint.
- In a separate bowl, whisk olive oil and lemon juice.
- Pour dressing over the salad and mix well.
- Season with salt to taste.
- Refrigerate for 30 minutes before serving.
