Description
A simple and delicious French onion soup with minimal stirring.
Ingredients

- 4 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
- 8 cups beef broth
- 1 cup dry white wine
- 1 tablespoon fresh thyme, chopped
- 1 bay leaf
- 8 slices of baguette
- 2 cups Gruyere cheese, shredded
Instructions
- Melt butter and olive oil in a large pot over medium heat.
- Add onions, salt, and sugar. Cook until onions are caramelized, about 30 minutes.
- Pour in the beef broth and white wine. Add thyme and bay leaf.
- Simmer for 20 minutes.
- Remove bay leaf and season to taste.
- Toast baguette slices.
- Serve soup in bowls topped with baguette and cheese.
Notes
- Use low-sodium broth for less salt.
- For a vegetarian version, use vegetable broth.
- This soup can be made ahead and reheated.
