Ingredients

  • 4 large onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 8 cups beef broth
  • 1 cup dry white wine
  • 1 tablespoon fresh thyme, chopped
  • 1 bay leaf
  • 8 slices of baguette
  • 2 cups Gruyere cheese, shredded

Instructions

  1. Melt butter and olive oil in a large pot over medium heat.
  2. Add onions, salt, and sugar. Cook until onions are caramelized, about 30 minutes.
  3. Pour in the beef broth and white wine. Add thyme and bay leaf.
  4. Simmer for 20 minutes.
  5. Remove bay leaf and season to taste.
  6. Toast baguette slices.
  7. Serve soup in bowls topped with baguette and cheese.

Notes

  • Use low-sodium broth for less salt.
  • For a vegetarian version, use vegetable broth.
  • This soup can be made ahead and reheated.
