Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground chicken
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups lasagna noodles, broken
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups spinach
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground chicken and cook until browned.
  3. Add onion and garlic, cooking until soft.
  4. Pour in chicken broth and diced tomatoes.
  5. Stir in broken lasagna noodles and Italian seasoning.
  6. Simmer for 15 minutes until noodles are tender.
  7. Add spinach, stirring until wilted.
  8. Serve in bowls topped with ricotta and mozzarella.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • For a creamier soup, add more ricotta.
