Ingredients

- 2 tablespoons olive oil
- 1 pound ground chicken
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 2 cups lasagna noodles, broken
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups spinach
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground chicken and cook until browned.
- Add onion and garlic, cooking until soft.
- Pour in chicken broth and diced tomatoes.
- Stir in broken lasagna noodles and Italian seasoning.
- Simmer for 15 minutes until noodles are tender.
- Add spinach, stirring until wilted.
- Serve in bowls topped with ricotta and mozzarella.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- For a creamier soup, add more ricotta.
