Description
Korean Spicy Cold Noodles, also known as Bibim Naengmyeon, is a refreshing dish perfect for hot days. This version can be made without beef.
Ingredients

- 200g Naengmyeon noodles
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 boiled egg, halved
- 2 tablespoons gochujang (Korean chili paste)
- 1 tablespoon sugar
- 1 tablespoon sesame oil
- 1 tablespoon vinegar
- Sesame seeds for garnish
Instructions
- Cook the naengmyeon noodles according to package instructions.
- Rinse the noodles under cold water and drain well.
- In a bowl, mix gochujang, sugar, sesame oil, and vinegar to make the sauce.
- Add the cooked noodles to the sauce and toss well.
- Plate the noodles and top with cucumber, carrot, and boiled egg.
- Sprinkle sesame seeds on top before serving.
Notes
- Adjust the spice level by adding more or less gochujang.
- For a vegetarian option, skip the egg or replace it with tofu.
- Serve immediately for the best texture.
