Ingredients

Scale
  • 1 tablespoon sesame oil
  • 1 ½ pounds lean ground beef
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • ½ cup low-sodium soy sauce
  • ¼ cup brown sugar, packed
  • 2 tablespoons gochujang (optional)
  • 1 tablespoon rice vinegar
  • 1 teaspoon Sriracha or chili garlic sauce (optional)
  • ½ teaspoon black pepper
  • 4 cups cooked white rice
  • ½ cup green onions, sliced
  • 2 tablespoons sesame seeds, toasted

Instructions

  1. In a small bowl, whisk together the soy sauce, brown sugar, gochujang (if using), rice vinegar, Sriracha (if using), and black pepper. Set aside.
  2. Heat the sesame oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink. Drain off any excess fat.
  3. Add the minced garlic and grated ginger to the cooked beef. Sauté for another minute until fragrant.
  4. Pour the prepared sauce over the ground beef mixture. Stir well to coat the beef.
  5. Bring the mixture to a gentle simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly and reduced.
  6. Divide the cooked rice among individual serving bowls.
  7. Spoon a generous amount of the Korean ground beef mixture over the rice.
  8. Garnish generously with sliced green onions and toasted sesame seeds. Serve immediately.

Notes

  • Adjust gochujang and Sriracha to your preferred spice level.
  • For a richer flavor, use a higher fat content ground beef, but be sure to drain the fat thoroughly.
  • Toasted sesame seeds add a wonderful nutty flavor and crunch.
  • Consider adding a fried egg, shredded carrots, or cucumber slices for extra texture and nutrition.
