Instructions
- In a small bowl, whisk together the soy sauce, brown sugar, gochujang (if using), rice vinegar, Sriracha (if using), and black pepper. Set aside.
- Heat the sesame oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink. Drain off any excess fat.
- Add the minced garlic and grated ginger to the cooked beef. Sauté for another minute until fragrant.
- Pour the prepared sauce over the ground beef mixture. Stir well to coat the beef.
- Bring the mixture to a gentle simmer and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly and reduced.
- Divide the cooked rice among individual serving bowls.
- Spoon a generous amount of the Korean ground beef mixture over the rice.
- Garnish generously with sliced green onions and toasted sesame seeds. Serve immediately.
