Ingredients

  • 1 tablespoon sugar
  • 1 tablespoon mirin
  • 1 teaspoon vegetable oil

Instructions

  1. In a bowl, whisk eggs, soy sauce, sugar, and mirin together.
  2. Heat a non-stick pan over medium heat and add vegetable oil.
  3. Pour a thin layer of egg mixture into the pan, tilting it to spread evenly.
  4. Cook until the edges start to set, then roll the omelette towards you.
  5. Push the rolled omelette to the back of the pan.
  6. Add more egg mixture to the pan, lifting the rolled omelette to let the new mixture flow underneath.
  7. Repeat the process until all the egg mixture is used.
  8. Remove from heat and let it cool slightly before slicing.

  • Adjust sweetness by changing sugar amount.
