Ingredients

- 1 head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 2 teaspoons jerk seasoning
- 1 cup cooked brown rice
- 1 cup black beans, rinsed
- 1 avocado, sliced
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- Juice of 1 lime
Instructions
- Preheat oven to 425°F (220°C).
- In a bowl, toss cauliflower florets with olive oil and jerk seasoning.
- Spread cauliflower on a baking sheet and roast for 25-30 minutes until golden.
- Prepare brown rice according to package instructions.
- Assemble bowls with brown rice, black beans, roasted cauliflower, avocado, tomatoes, and cilantro.
- Drizzle with lime juice before serving.
Notes
- Adjust jerk seasoning to taste.
- Serve warm for best flavor.
- Can add other vegetables if desired.
