Ingredients

- 2 pounds chicken, cut into pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 bell peppers, chopped
- 2 carrots, sliced
- 1 tablespoon ginger, grated
- 3 tablespoons brown sugar
- 3 tablespoons soy sauce
- 1 tablespoon vinegar
- 2 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon allspice
- Salt and pepper to taste
Instructions
- Season chicken with salt, pepper, and allspice.
- Heat oil in a pot and brown the chicken on all sides.
- Remove chicken and set aside.
- In the same pot, sauté onions, garlic, and ginger until fragrant.
- Add bell peppers and carrots, cook for a few minutes.
- Stir in brown sugar, soy sauce, and vinegar.
- Add chicken back to the pot along with chicken broth and thyme.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes.
- Adjust seasoning and serve hot.
Notes
- Pair with rice and peas for a complete meal.
- Use bone-in chicken for more flavor.
- Let the stew sit for a few hours for better taste.
