Description

Ingredients

  • 500g strong white bread flour
  • 75g sugar
  • 10g salt
  • 10g mixed spice powder
  • 10g instant yeast
  • 300ml milk, lukewarm
  • 50g unsalted butter, melted
  • 1 large egg
  • 200g mixed dried fruit
  • 75g candied peel
  • For the cross: 75g plain flour and water
  • For the glaze: 75g apricot jam

Instructions

  1. In a bowl, mix flour, sugar, salt, and mixed spice.
  2. Add yeast to one side and salt to the other.
  3. In another bowl, combine lukewarm milk, melted butter, and egg.
  4. Pour wet ingredients into the dry ingredients and mix.
  5. Knead the dough for 10 minutes until smooth.
  6. Incorporate dried fruit and candied peel.
  7. Let the dough rise in a warm place for 1 hour or until doubled in size.
  8. Shape the dough into buns and place on a baking tray.
  9. Let rise for another 30 minutes.
  10. Mix plain flour with water to make a paste for the crosses.
  11. Pipe crosses on buns and bake at 220°C for 20 minutes.
  12. Heat apricot jam and brush over warm buns for a glaze.
