Ingredients

- 1 cup quinoa
- 1 lb chicken breast, diced
- 1 cup broccoli florets
- 1 cup bell peppers, diced
- 1 can chickpeas, drained
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions.
- In a pan, heat olive oil over medium heat.
- Add diced chicken, garlic powder, paprika, salt, and pepper. Cook until chicken is fully cooked.
- Add broccoli and bell peppers to the pan. Sauté until tender.
- In meal prep containers, layer quinoa, chicken mixture, and chickpeas.
- Store in the refrigerator for up to 5 days.
