Description
A nourishing and filling soup packed with lentils and vegetables.
Ingredients

- 1 cup lentils
- 2 carrots, chopped
- 1 onion, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 6 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt to taste
- Pepper to taste
Instructions
- Rinse lentils under cold water.
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook for 1 minute.
- Stir in lentils, diced tomatoes, vegetable broth, thyme, and cumin.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- Store leftovers in the refrigerator for up to 5 days.
- This soup freezes well.
- Feel free to add more vegetables as desired.
