Description

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 cups sliced mushrooms
  • 2 cups fresh spinach
  • 2 cloves minced garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Cut a pocket into the side of each chicken breast.
  3. Heat one tablespoon of oil in a pan over medium heat.
  4. Cook mushrooms and garlic until soft.
  5. Add spinach and cook until wilted.
  6. Stuff the mushroom mixture into the chicken pockets.
  7. Secure the edges with toothpicks.
  8. Season the outside with salt and pepper.
  9. Brown the chicken in the remaining oil for two minutes per side.
  10. Place chicken on a baking sheet.
  11. Bake for 20 minutes until the internal temperature reaches 165 degrees Fahrenheit.

  • Use baby bella mushrooms for flavor.
  • Do not overfill the chicken to prevent leaking.
