Description

- 4 boneless skinless chicken breasts
- 2 cups sliced mushrooms
- 2 cups fresh spinach
- 2 cloves minced garlic
- 2 tablespoons olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- Cut a pocket into the side of each chicken breast.
- Heat one tablespoon of oil in a pan over medium heat.
- Cook mushrooms and garlic until soft.
- Add spinach and cook until wilted.
- Stuff the mushroom mixture into the chicken pockets.
- Secure the edges with toothpicks.
- Season the outside with salt and pepper.
- Brown the chicken in the remaining oil for two minutes per side.
- Place chicken on a baking sheet.
- Bake for 20 minutes until the internal temperature reaches 165 degrees Fahrenheit.
Notes
- Use baby bella mushrooms for flavor.
- Do not overfill the chicken to prevent leaking.
- Remove toothpicks before you serve the dish.
