Ingredients

- 1 cup grated carrots
- 1 cup grated zucchini
- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1/2 cup honey
- 1/4 cup unsweetened applesauce
- 2 eggs
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- Grease a baking pan.
- In a bowl, mix grated carrots and zucchini.
- In another bowl, combine flour, oats, cinnamon, baking powder, baking soda, and salt.
- In a separate bowl, whisk together honey, applesauce, and eggs.
- Add the wet ingredients to the dry ingredients and mix well.
- Fold in the grated carrots and zucchini.
- Pour batter into the prepared baking pan.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before cutting into bars.
