Ingredients

  • 1 cup grated zucchini
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup honey
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a baking pan.
  3. In a bowl, mix grated carrots and zucchini.
  4. In another bowl, combine flour, oats, cinnamon, baking powder, baking soda, and salt.
  5. In a separate bowl, whisk together honey, applesauce, and eggs.
  6. Add the wet ingredients to the dry ingredients and mix well.
  7. Fold in the grated carrots and zucchini.
  8. Pour batter into the prepared baking pan.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Let cool before cutting into bars.
