Ingredients

- 1 lb carrots, peeled and cut into sticks
- 2 tbsp harissa paste
- 2 tbsp olive oil
- 1/2 cup feta cheese
- 1/4 cup cream cheese
- 1/4 cup yogurt
- 1 tbsp lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix carrots with harissa and olive oil.
- Spread the carrots on a baking sheet in a single layer.
- Roast for 25-30 minutes until tender.
- In another bowl, blend feta, cream cheese, yogurt, lemon juice, salt, and pepper until smooth.
- Serve the roasted carrots topped with whipped feta.
