Ingredients

- 1 leg of lamb (4–5 lbs)
- 3 tablespoons harissa paste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lemon, juiced
- Fresh herbs (rosemary, thyme) for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix harissa paste, olive oil, garlic, salt, pepper, and lemon juice.
- Rub the mixture all over the lamb.
- Place the lamb in a roasting pan.
- Roast for 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
- Let the lamb rest for 15 minutes before slicing.
- Garnish with fresh herbs before serving.
Notes
- Adjust the harissa amount based on your spice preference.
- Serve with roasted vegetables for a complete meal.
- Leftovers can be stored in the fridge for up to 3 days.
