Ingredients

  • 2 tablespoons harissa paste

  • 1 cup spinach, chopped
  • 1/2 cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup feta cheese, crumbled
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix chickpeas with harissa paste and olive oil.
  3. Spread chickpeas on a baking sheet and roast for 20 minutes.
  4. In a large bowl, combine cooked quinoa, spinach, cucumber, and bell pepper.
  5. Add roasted chickpeas to the bowl.
  6. Top with feta cheese, salt, and pepper.
  7. Serve warm or at room temperature.
