Ingredients

- 4 chicken thighs
- 2 tablespoons harissa paste
- 1 red onion, sliced
- 2 bell peppers, chopped
- 1 zucchini, sliced
- 3 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 200°C (400°F).
- In a bowl, mix harissa paste with olive oil, salt, and pepper.
- Toss the chicken thighs in the harissa mixture until coated.
- Arrange the chicken, onion, bell peppers, and zucchini on a baking tray.
- Roast in the oven for 30-35 minutes until the chicken is cooked through.
- Garnish with fresh parsley before serving.
