Description
A traditional Middle Eastern dish featuring lamb and rice.
Ingredients

- 2 lbs lamb, cut into pieces
- 2 cups basmati rice
- 1 large onion, chopped
- 4 cups water or broth
- 1 cup plain yogurt
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- Salt to taste
- Pine nuts for garnish
- Fresh parsley for garnish
Instructions
- In a pot, brown the lamb with onions.
- Add water or broth and spices; simmer until tender.
- Remove lamb and strain the broth.
- Cook rice in the strained broth until fluffy.
- Mix yogurt with a bit of broth, then stir into the rice.
- Serve rice topped with lamb, pine nuts, and parsley.
Notes
- Use halal-certified lamb.
- Soak rice for 30 minutes before cooking.
- Adjust seasoning to your taste.
