Ingredients

- 2 Halal chicken breasts
- 1 cup panko breadcrumbs
- 1 cup all-purpose flour
- 2 eggs
- 2 tablespoons oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 cups chicken broth
- 2 tablespoons curry powder
- 1 tablespoon soy sauce
- Salt to taste
- Pepper to taste
Instructions
- Prepare the chicken by flattening it with a meat mallet.
- Season the chicken with salt and pepper.
- Dredge the chicken in flour, dip in beaten eggs, and coat with panko breadcrumbs.
- Heat oil in a pan over medium heat.
- Fry the chicken until golden brown on both sides.
- Remove the chicken and set aside.
- In the same pan, sauté onion and carrots until soft.
- Add chicken broth, curry powder, and soy sauce; simmer for 10 minutes.
- Slice the chicken and serve it over rice with curry sauce.

- Serve with steamed rice.
- Adjust curry powder to taste.
