Ingredients

  • 1 cup panko breadcrumbs
  • 1 cup all-purpose flour
  • 2 eggs
  • 2 tablespoons oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cups chicken broth
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prepare the chicken by flattening it with a meat mallet.
  2. Season the chicken with salt and pepper.
  3. Dredge the chicken in flour, dip in beaten eggs, and coat with panko breadcrumbs.
  4. Heat oil in a pan over medium heat.
  5. Fry the chicken until golden brown on both sides.
  6. Remove the chicken and set aside.
  7. In the same pan, sauté onion and carrots until soft.
  8. Add chicken broth, curry powder, and soy sauce; simmer for 10 minutes.
  9. Slice the chicken and serve it over rice with curry sauce.
