Description
A delicious and satisfying Halal cart-style chicken rice dish.
Ingredients

- 2 cups basmati rice
- 1 pound chicken thighs, boneless and skinless
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups chicken broth
- 1/4 cup chopped parsley
Instructions
- Rinse the basmati rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat. Add garlic and onion, sauté until soft.
- Add chicken thighs, cumin, paprika, salt, and pepper. Cook until chicken is browned.
- Pour in chicken broth and bring to a boil.
- Add the rinsed rice, cover, and reduce heat. Simmer for about 20 minutes.
- Fluff the rice with a fork and stir in chopped parsley before serving.
Notes
- Adjust spices according to your taste.
- Serve with a side of salad or yogurt sauce.
