Ingredients

  • 2 cups basmati rice
  • 1 pound chicken thighs, boneless and skinless
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1/4 cup chopped parsley

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a pot, heat olive oil over medium heat. Add garlic and onion, sauté until soft.
  3. Add chicken thighs, cumin, paprika, salt, and pepper. Cook until chicken is browned.
  4. Pour in chicken broth and bring to a boil.
  5. Add the rinsed rice, cover, and reduce heat. Simmer for about 20 minutes.
  6. Fluff the rice with a fork and stir in chopped parsley before serving.
