Description

  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced (optional, for color and sweetness)
  • 1 pound lean ground beef (80/20 or 85/15 works beautifully)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • 2 tablespoons Worcestershire sauce
  • 4 hoagie rolls or sub rolls, split lengthwise
  • 8 slices provolone cheese (or American cheese, if preferred)
  • 2 tablespoons unsalted butter, softened (for rolls)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the thinly sliced yellow onion and bell peppers. Sauté for 7-10 minutes until softened and starting to caramelize. Remove from the pan and set aside.
  2. Add the ground beef to the same skillet. Break it apart and cook until fully browned. Drain any excess grease.
  3. Stir in the garlic powder, onion powder, dried oregano, black pepper, and salt. Mix well.
  4. Add the Worcestershire sauce and stir to combine.
  5. Return the sautéed onions and peppers to the skillet with the ground beef. Stir everything together, allowing flavors to meld for 2-3 minutes over medium heat.
  6. Lightly butter the inside of each hoagie roll. Toast the rolls briefly in a dry skillet, under the broiler, or in a toaster oven until golden brown and slightly crispy.
  7. Divide the ground beef and veggie mixture into four equal portions in the skillet. Lay two slices of provolone cheese over each portion.
  8. Reduce the heat to low, cover the skillet, and let the cheese melt until gloriously gooey and bubbly (1-2 minutes).
  9. Carefully scoop each cheesy beef portion into a toasted hoagie roll. Serve immediately.

  • For an extra kick, add a pinch of red pepper flakes to the beef mixture.
  • Experiment with different cheeses like Monterey Jack or Swiss for a twist.
