- 2 cups cooked rice (white or brown)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 avocado, sliced

- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
- 1 cup cherry tomatoes, halved
- 1/2 cup corn kernels (fresh, frozen, or canned)
Instructions
- Start by cooking your rice according to package instructions. Once cooked, set it aside to keep warm.
- While the rice is cooking, heat the olive oil in a large skillet or pan over medium-high heat.
- Add the diced onion and bell pepper to the skillet and cook for 3-4 minutes until they begin to soften.
- Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Cook for 5-7 minutes until the beef is browned and no longer pink.
- Drain any excess fat from the skillet if desired.
- Add the minced garlic, cumin, paprika, chili powder, salt, and pepper to the skillet. Stir well to combine and cook for another minute until fragrant.
- Reduce the heat to low and let the beef mixture simmer for 2-3 minutes to allow the flavors to meld together.
- To assemble the bowls, start with a base of cooked rice in each bowl.
- Top the rice with a generous portion of the seasoned ground beef mixture.
- Add your favorite toppings: shredded cheese, sliced avocado, dollops of sour cream, chopped cilantro, halved cherry tomatoes, and corn kernels.
- Serve immediately with lime wedges on the side for squeezing over the bowls.
Notes
- For extra flavor, you can toast your spices in the dry skillet for 30 seconds before adding them to the beef mixture.
