Ingredients

Scale
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 2 cups cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn kernels (fresh, frozen, or canned)

Instructions

  1. Start by cooking your rice according to package instructions. Once cooked, set it aside to keep warm.
  2. While the rice is cooking, heat the olive oil in a large skillet or pan over medium-high heat.
  3. Add the diced onion and bell pepper to the skillet and cook for 3-4 minutes until they begin to soften.
  4. Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Cook for 5-7 minutes until the beef is browned and no longer pink.
  5. Drain any excess fat from the skillet if desired.
  6. Add the minced garlic, cumin, paprika, chili powder, salt, and pepper to the skillet. Stir well to combine and cook for another minute until fragrant.
  7. Reduce the heat to low and let the beef mixture simmer for 2-3 minutes to allow the flavors to meld together.
  8. To assemble the bowls, start with a base of cooked rice in each bowl.
  9. Top the rice with a generous portion of the seasoned ground beef mixture.
  10. Add your favorite toppings: shredded cheese, sliced avocado, dollops of sour cream, chopped cilantro, halved cherry tomatoes, and corn kernels.
  11. Serve immediately with lime wedges on the side for squeezing over the bowls.

Notes

  • For extra flavor, you can toast your spices in the dry skillet for 30 seconds before adding them to the beef mixture.
  • Don’t skip the lime wedges! The acidity of the lime juice brightens up all the flavors in the bowl.
  • If you prefer a spicier kick, add a dash of hot sauce or some diced jalapeños to the beef mixture.
  • Make sure to drain excess fat from the ground beef after cooking for a healthier result.
  • For a creamier texture, mix some sour cream directly into the beef mixture before serving.
  • Let the beef mixture simmer for a few extra minutes to develop deeper flavors.
