Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup salsa verde
  • 4 slices pepper jack cheese
  • 2 tablespoons fresh cilantro

Instructions

  1. Preheat your grill to medium high heat.
  2. Brush chicken with olive oil and season with salt and pepper.
  3. Place chicken on the grill grate.
  4. Cook for 6 minutes on each side.
  5. Spoon salsa verde over each piece of chicken.
  6. Top each breast with a slice of pepper jack cheese.
  7. Close the grill lid for 1 minute to melt the cheese.
  8. Remove chicken from the grill when the internal temperature reaches 165 degrees Fahrenheit.
  9. Let the meat rest for 5 minutes.
  10. Garnish with cilantro and serve.
