Description
Grilled octopus served with a rich and flavorful romesco sauce.
Ingredients

- 1 large octopus (about 2–3 pounds)
- 1 cup olive oil
- 1 lemon, juiced
- Salt and pepper to taste
- 1 red bell pepper, roasted
- 1/2 cup almonds, toasted
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 tablespoon red wine vinegar
Instructions
- Clean the octopus and tenderize it by beating with a mallet.
- In a bowl, mix olive oil, lemon juice, salt, and pepper. Marinate the octopus for at least 2 hours.
- Preheat the grill to medium-high heat.
- Grill the octopus for about 3-4 minutes on each side until charred.
- In a blender, combine roasted red pepper, almonds, garlic, smoked paprika, red wine vinegar, and remaining olive oil. Blend until smooth.
- Serve the grilled octopus with the romesco sauce on the side.

- Adjust seasoning according to taste.
- Let the octopus marinate longer for more flavor.
