Ingredients

  • 1 cup olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste
  • 1 red bell pepper, roasted
  • 1/2 cup almonds, toasted
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 tablespoon red wine vinegar

Instructions

  1. Clean the octopus and tenderize it by beating with a mallet.
  2. In a bowl, mix olive oil, lemon juice, salt, and pepper. Marinate the octopus for at least 2 hours.
  3. Preheat the grill to medium-high heat.
  4. Grill the octopus for about 3-4 minutes on each side until charred.
  5. In a blender, combine roasted red pepper, almonds, garlic, smoked paprika, red wine vinegar, and remaining olive oil. Blend until smooth.
  6. Serve the grilled octopus with the romesco sauce on the side.
