Description

This meal features grilled chicken breasts coated in honey BBQ sauce served with roasted garlic parmesan potatoes.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 2 large russet potatoes cubed
  • 2 tablespoons olive oil
  • 3 minced garlic cloves
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions

  1. Pre-heat your grill to medium high heat.
  2. Toss potato cubes with olive oil garlic parmesan and parsley in a bowl.
  3. Wrap potatoes in a foil packet.
  4. Season chicken with salt and pepper.
  5. Place the potato packet on the grill for 20 minutes.
  6. Put chicken on the grill and cook for 6 minutes per side.
  7. Brush chicken with honey and BBQ sauce mixture during the last 4 minutes.
  8. Remove everything from the grill and serve.

Notes

  • Cut potatoes into small even cubes for faster cooking
  • Use a meat thermometer to check chicken reaches 165 degrees
