A savory tart filled with vegetables inspired by the classic French ratatouille.

- 1 pre-made tart crust
- 2 medium zucchinis, sliced
- 1 medium eggplant, diced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté until soft.
- Add eggplant, cook for 5 minutes.
- Stir in zucchinis and bell peppers, cook for another 5 minutes.
- Add diced tomatoes, thyme, basil, salt, and pepper.
- Simmer for 10 minutes until vegetables soften.
- Pour the vegetable mixture into the tart crust.
- Top with mozzarella cheese.
- Bake for 25-30 minutes until the cheese is bubbly and golden.
- Let cool for 5 minutes before slicing.
Notes
- Serve warm or at room temperature.
- Pair with a green salad for a full meal.
- This tart can be made a day in advance.
