Ingredients

  • 2 medium zucchinis, sliced
  • 1 medium eggplant, diced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a pan over medium heat.
  3. Add onion and garlic, sauté until soft.
  4. Add eggplant, cook for 5 minutes.
  5. Stir in zucchinis and bell peppers, cook for another 5 minutes.
  6. Add diced tomatoes, thyme, basil, salt, and pepper.
  7. Simmer for 10 minutes until vegetables soften.
  8. Pour the vegetable mixture into the tart crust.
  9. Top with mozzarella cheese.
  10. Bake for 25-30 minutes until the cheese is bubbly and golden.
  11. Let cool for 5 minutes before slicing.
