Description

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 8 cups beef broth
  • 1 cup white wine
  • 1 teaspoon sugar
  • 1 bay leaf
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste
  • 8 slices of baguette
  • 2 cups grated Gruyere cheese

Instructions

  1. Melt butter and olive oil in a large pot over medium heat.
  2. Add sliced onions and cook until caramelized, about 30 minutes.
  3. Stir in sugar, bay leaf, and thyme.
  4. Add white wine and cook for 5 minutes.
  5. Pour in beef broth, season with salt and pepper, and simmer for 20 minutes.
  6. Preheat the broiler.
  7. Place baguette slices on a baking sheet and toast under the broiler.
  8. Serve soup in bowls, top with toasted baguette and cheese.
  9. Broil until cheese is melted and bubbly.

Notes

  • Use low-sodium broth if desired.
  • For a vegetarian version, substitute vegetable broth and use a different cheese.
