- 4 large potatoes, sliced
- 2 large onions, thinly sliced
- 3 tablespoons olive oil

- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme, chopped
- 1 cup grated Gruyere cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Toss potato slices with olive oil, salt, and pepper.
- Spread potatoes on a baking sheet in a single layer.
- Roast potatoes for 25-30 minutes until golden brown.
- Meanwhile, heat a skillet over medium heat and add onions.
- Cook onions, stirring frequently, for 15-20 minutes until caramelized.
- Add thyme to the onions and mix well.
- Once potatoes are done, remove from oven.
- Top roasted potatoes with caramelized onions and sprinkle cheese on top.
- Return to oven for 5-7 minutes until cheese melts.
