A refreshing salad made with French lentils and cherry tomatoes.


Ingredients

  • 1 cup French lentils
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water.
  2. In a pot, combine lentils and water. Bring to a boil.
  3. Reduce heat and simmer for 20-25 minutes until tender.
  4. Drain and let cool.
  5. In a large bowl, combine lentils, cherry tomatoes, red onion, cucumber, and parsley.
  6. In a small bowl, whisk together olive oil and balsamic vinegar.
  7. Pour dressing over the salad and mix well.
  8. Season with salt and pepper to taste.
  9. Serve chilled or at room temperature.
