Description
Ethiopian lentil stew with spices.
Ingredients

- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 2 tablespoons berbere spice
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion, garlic, and ginger; sauté until soft.
- Stir in berbere spice; cook for 2 minutes.
- Add lentils and vegetable broth; bring to a boil.
- Reduce heat and simmer for 25-30 minutes until lentils are tender.
- Add salt to taste and serve hot.
Notes
- Serve with injera or rice.
- Store leftovers in the refrigerator.
- Can be made ahead of time.
