Healthy breakfast cups made with eggs and spinach.
Ingredients

- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese
- 1/4 cup milk
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together eggs and milk.
- Add chopped spinach, tomatoes, cheese, salt, and pepper to the egg mixture.
- Grease a muffin tin.
- Pour the mixture evenly into the muffin tin.
- Bake for 20-25 minutes or until set.
- Let cool for a few minutes before serving.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- These can be reheated in the microwave.
- Feel free to add your favorite vegetables or meats.
