Description

Easy Baba Ghanoush is a delicious Middle Eastern dip made from roasted eggplant, tahini, and spices.


Ingredients

  • 1 large eggplant
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt to taste
  • Pine nuts for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the eggplant with a fork and place it on a baking sheet.
  3. Roast the eggplant for 30-40 minutes until the skin is charred and the flesh is soft.
  4. Let the eggplant cool, then scoop out the flesh into a bowl.
  5. Add tahini, olive oil, lemon juice, garlic, and salt to the bowl.
  6. Blend until smooth.
  7. Transfer to a serving dish and garnish with pine nuts.

Notes

  • Serve with pita bread or veggies.
  • Store leftovers in the fridge for up to 3 days.
