Description
Easy Baba Ghanoush is a delicious Middle Eastern dip made from roasted eggplant, tahini, and spices.
Ingredients

- 1 large eggplant
- 1/4 cup tahini
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- Salt to taste
- Pine nuts for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce the eggplant with a fork and place it on a baking sheet.
- Roast the eggplant for 30-40 minutes until the skin is charred and the flesh is soft.
- Let the eggplant cool, then scoop out the flesh into a bowl.
- Add tahini, olive oil, lemon juice, garlic, and salt to the bowl.
- Blend until smooth.
- Transfer to a serving dish and garnish with pine nuts.
Notes
- Serve with pita bread or veggies.
- Store leftovers in the fridge for up to 3 days.
- Adjust garlic and lemon to taste.
