Description
Black Mushroom Rice made with dried mushrooms.
Ingredients
Scale
- 2 cups white rice
- 1 cup dried djon djon mushrooms
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt to taste
Instructions
- Rinse the rice under cold water until the water runs clear.
- Soak the dried mushrooms in warm water for 30 minutes.
- Heat olive oil in a pot over medium heat. Add onion and garlic, sauté until soft.
- Add soaked mushrooms and their soaking water to the pot.
- Stir in the rice and salt, and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- You can adjust the salt based on your preference.
- Serve with grilled chicken or vegetables.
- Store leftovers in the refrigerator for up to 3 days.
